Production Process


Farms

 

Mondelli Group has seven farms totaling 8028 acres, all in the region of Bauru, state of São Paulo, in a tropical climate conducive to extensive Nelore cattle.


15,000 heads of cattle are raised in the farm annually in natural green pastures, clean and abundant natural water and strict phyto-sanitary control.


Around 20% of the land is comprised of native reserve, with untouched virgin forests, protecting natural fauna and flora.

 

Cattle selection

 

The cattle slaughtered by Mondelli come from Mondelli’s Rural Division. Investments in breeding stock, the constant veterinary care and the use of traceability provide the best meat for the most demanding markets, sustaining a quality standard recognized internationally for over 20 years.

Slaughterhouse Mondelli also buys cattle from their partners breeders who follow the same procedures required for international quality standards.

 

Slaughtering


The animals brought to Slaughterhouse Mondelli are inspected by Vets of the Federal Inspection Service before and along the entire production chain process, ensuring the health of each carcass. They are also carefully selected through a purchasing technical procedure, focusing on traceability and quality.


Throughout the process of transportation, arrival, accommodation, rest, hydration, handling and slaughtering of the animals, Mondelli employs Humane Slaughter techniques, aimed at the animals’ welfare.


In order to meet the Islamic market demands, Slaughterhouse Mondelli is entitled to practice Halal* method of slaughtering, which happens on a regular basis.

Mondelli has a slaughtering installed capacity of 900 animals per day.

*Halal, in Arabic, means "lawful, permitted," and almost all foods are considered "halal". Cattle will only enter this category if they are Zabihah (i.e. slaughtered according to Islamic rite. (Source)
 

 

Deboning

 

Handmade boning happens in a strictly controlled environment. Cold cuts receive special care to reach the consumer sustaining quality.

Quality Control

 

The industrial complex Mondelli presents an efficient quality assurance and control system, whose purpose is to provide product safety and customer satisfaction.

The excellent quality is guaranteed by the constant audits and certifications performed by international bodies of audits and inspections appointed by the Brazilian Ministry of Agriculture, Livestock and Food Supply.

The slaughterhouse has excellent scores, stating its level of accreditation for exports.

The methods of quality control during the processes of production, packaging, storage and shipment of products are developed and monitored by the Mondelli Quality Control, through the programs:
GMP – Good Manufacturing Practices;
SSOP - Sanitation Standard Operating Procedures;
SOP - Standard Operating Procedure;
HACCP -- Hazard Analysis and Critical Control Points;
Humane Slaughter; and
Specified Risk Material Control;
which are under constant monitoring and supervision of the Federal Inspection Service (SIF).

 

Export


Slaughterhouse Mondelli is authorized to export meat in natura since 1988.

Over the years, the slaughterhouse has been the favorite among the main importers around the world by applying the philosophy "Export Quality".

"Export Quality" is built into all export processes, from negotiation to production, logistics, documentation and delivery of final product to the importer.


We believe that personalized service is fundamental to the establishment of a lasting relationship.

Logistics

Storage containers are packed directly in the company, making the shipment process faster, safer and sustaining product quality from the beginning of the process to its final destination.

The whole procedure is performed in order to comply with shipment dates which are strictly adhered to.
